Chicken Goujons

Chicken Goujons

I didn’t make these until Emily came along – and now every time I make them, I think I’m never buying ready-made supermarket chicken goujons again as they are so tasty! Must try and stick to that plan! You can also freeze them uncooked so handy if you want to get organised. Prep time: 30 mins Cooking time: 20 mins   Ingredients 500g chicken breast (or fish fillets) 4 tbsp plain flour 2 eggs, beaten 300g breadcrumbs / about 4 slices of bread olive oil   Method Preheat oven to 190'C Cut uncooked chicken breasts into strips   Toast a piece...

Courgette Omelette Recipe

Courgette Omelette Recipe

Simple and quick and surprisingly filling, this is a great stand-by. I used courgette as the main ingredient but it can be replaced with any veg. Don't be tempted to cut the veg too small, it makes it easier for your baby to hold if chunky. Makes: 1 omelette Prep time: 5 minutes prep Cooking time: 4 minutes cooking   Ingredients 1 medium free range egg 1 inch of courgette chopped up to chunks A handful of grated cheddar cheese 50ml of breast or whole milk Extra Virgin Olive Oil   Method Whisk the eggs, cheese and milk in a...

Macaroni Cheese Pasta Recipe

I always have these ingredients in the house (pasta, flour and milk) so this a great standby-by recipe. Plus it only takes 20 minutes to make. I first remember my Best-Friend’s Mum making this when I was about six  - I always insisted on staying for dinner as the smell of it cooking under the grill was irresistible! Prep and cooking time: Max 25 minutes  Feeds: one adult and one baby Ingredients 140g pasta 260ml milk 30g plain flour Desert spoon of Philidelphia  tsp of wholegrain mustard* (optional) 1 Apple 30g grated cheese Several cornflakes (yes, you read that correctly)...

Pumpkin soup

"Babies + soup?? I don't think so!"  I hear you cry! Yes it can be messy but make it thick and give them bread to dip in it and it could become a staple lunchtime meal. Plus it's really healthy so feels good to get all that veg down them!  You may like to consider using one of our Long Sleeved Weaning Bibs though!  Prep time: 15 mins Cooking time: 30-45 mins N.B. be prepared to freeze some of this soup, it'll feed a couple of adults and children approximately two times over.  Ingredients Splash of oil or knob of unsalted...

American Pancakes

American Pancakes

This is what we call our “New York Breakfast” (also known as Drop scones and Scotch pancakes). Before Emily, I used to make a Lorraine Pascal’s pancakes. The recipe included tablespoons of sugar (note plural!), a vanilla pod all of which were a no no once our daughter came along as I had visions of her bouncing off the ceiling from all the sugar! So out came the baby–led weaning cookbook and to my surprise, these pancakes are really tasty without the sugar. The Cinnamon and banana create the flavour so adults like them too. This recipe makes roughly a...
