I always have these ingredients in the house (pasta, flour and milk) so this a great standby-by recipe. Plus it only takes 20 minutes to make. This is what we call our “New York Breakfast” (also known as Drop scones and Scotch pancakes). Before Emily, I used to make a Lorraine Pascal’s pancakes. The recipe included tablespoons of sugar (note plural!), a vanilla pod all of which were a no no once our daughter came along as I had visions of her bouncing off the ceiling from all the sugar! I use a very descriptive title because if I see ‘muffin’, I expect flour to be in them! When I was weaning my daughter, I cooked the equivalent Frittatas on the hob and even if I washed up straight away, a fried smell always seemed to linger.
